  • 1 1/2 cups flour
  • 1 1/2 cups pumpkin (canned)
  • 1/2 cup honey
  • 2 eggs, beaten
  • 1/2 cup butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon ground allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • Add In
  • 1/2 cup pecans, chopped
  • 1/2 cup dried cranberries
  • 1 tablespoon flour

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Combine flour, baking powder, spices and salt in a large mixing bowl.

  • Step 3: Add pumpkin, honey, butter and eggs.

  • Step 4: Stir just until combined, don’t overmix.

  • Step 5: Stir in nuts and cranberries mixed with flour.

  • Step 6: Pour batter into a greased 6” x 9” bread pan.

  • Step 7: Bake approximately one hour or until toothpick inserted in center comes out clean.

  • Step 8: Remove loaf from pan and let cool on a baking rack. Loaf can be tightly wrapped in plastic or foil and frozen or refrigerated.
