Ingredients

The ingredients are:
  • 12 ounces dry white long grain rice (1 1/2 cups)
  • 2 tablespoons carrots, minced fine
  • 2 tablespoons red bell pepper, minced
  • 1 clove garlic, minced
  • 2 tablespoons onions, minced
  • 2 tablespoons olive oil
  • 2 1/4 cups water, boiling
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper

How to Make

  • Step 1: Rinse the rice thoroughly under cold running water and drain.

  • Step 2: Boil water.

  • Step 3: While water is boiling, heat oil in a separate saucepan over medium heat.

  • Step 4: Add the bell pepper, onions, carrots, & garlic. Saute, stirring for 2 minutes.

  • Step 5: Add the rice and cook until the rice has absorbed the flavorful oil and is translucent.

  • Step 6: Pour in hot water.

  • Step 7: Season to taste.

  • Step 8: Bring to a boil.

  • Step 9: Reduce the heat to low, cover and simmer for 20 minutes.

  • Step 10: Do not uncover.

  • Step 11: Take off heat and let sit covered for 5 minutes.
