Step 1: Heat oil in a pan and add cumin seeds. When they sizzle add ginger & garlic and saute for 30 seconds. Then add the onions and stir fry until transparent.
Step 2: Add the potatoes and green chili , stir fry for 2 or 3 minutes, add a splash of water, cover and cook on low heat until they are half done.
Step 3: Then add cauliflower and stir fry for 3 minutes. Add red chili powder, turmeric, cumin, garam masala and coriander powder. Mix well adding about 3 Tbs of water to the pan .
Step 4: Season with salt and cook cover (stirring occasionally) until potatoes are fully cooked.
Step 5: Add 2 Tbs of oil and tomatoes. Cook for about 2 minutes. Garnish with cilantro and season with lemon juice
