Ingredients

The ingredients are:
  • 1 1/2 cups potatoes, cubed
  • 2 cups cauliflower florets
  • 3/4 cups onion, finely chopped
  • 3/4 cup tomatoes, finely chopped
  • 1/2 tablespoon ginger, grated
  • 1/2 tablespoon garlic, minced
  • 1 green chili, chopped
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon salt
  • 3 tablespoons oil
  • 1/2 teaspoons cumin seeds
  • 3/4 teaspoons Kashmiri chili powder
  • 1/4 teaspoon turmeric
  • 1 teaspoon garam masala
  • 3/4 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 lemon, juiced

How to Make

  • Step 1: Heat oil in a pan and add cumin seeds. When they sizzle add ginger & garlic and saute for 30 seconds. Then add the onions and stir fry until transparent.

  • Step 2: Add the potatoes and green chili , stir fry for 2 or 3 minutes, add a splash of water, cover and cook on low heat until they are half done.

  • Step 3: Then add cauliflower and stir fry for 3 minutes. Add red chili powder, turmeric, cumin, garam masala and coriander powder. Mix well adding about 3 Tbs of water to the pan .

  • Step 4: Season with salt and cook cover (stirring occasionally) until potatoes are fully cooked.

  • Step 5: Add 2 Tbs of oil and tomatoes. Cook for about 2 minutes. Garnish with cilantro and season with lemon juice
