Step 1: Cut zucchini into matchsticks that are about 1/2″ thick.(They also have thin half moon shapes)
Step 2: Spread the zucchini sticks on a cutting board and sprinkle with salt.
Step 3: Let it sit for 10 minutes.
Step 4: Salt will pull out the water from zucchini and prevent it from turning into mush when stir-frying.
Step 5: Place zucchini in a colander or a wire mesh and rinse with cold water.
Step 6: Pat dry with a paper towel.
Step 7: Heat cooking oil in a nonstick pan over medium heat.
Step 8: Add carrots, cook.
Step 9: Add onion, (large enough chunks that you can grab with chopsticks) andcook.
Step 10: Add zucchini, cook until lightly browned.
Step 11: Add garlic, cooking a bit.
Step 12: Add crab, fish sauce and sesame oil.
Step 13: Warm up.
Step 14: Sprinkle with sesame seeds.
Step 15: Cook for a minute.
