Ingredients

The ingredients are:
  • 4 ounces white chocolate, chopped
  • 4 ounces cream cheese, reduced fat, cubed and softened (Neufchâtel was mentioned)
  • 1/2 cup evaporated milk, low fat
  • 3/4 cup Greek yogurt, plain and low-fat
  • 1 teaspoon vanilla
  • 8 ounces strawberries, fresh or frozen and hulled (if using frozen berries, thaw them before using)
  • 2 tablespoons agave syrup, light
  • 1 teaspoon lemon juice
  • 1/3 cup graham cracker crumbs

How to Make

  • Step 1: In a bowl place the chocolate and cream cheese.

  • Step 2: In a saucepan over low heat, heat the milk until it begins to steam and bubbles form. Pour hot milk over the chocolate and cream cheese and let stand for 5 minutes and then whisk until smooth. Whisk in the yogurt and vanilla.

  • Step 3: In a blender or food processor combine the berries, agave syrup and lemon juice and blend until smooth.

  • Step 4: Spoon half of the cream cheese mixture into six 4-oz popsicle molds or use paper cups. Sprinkle with half of the graham cracker crumbs and then top with the strawberry mixture and the remaining cream cheese mixture and graham cracker crumbs. Using a skewer swirl the mixtures together and then add the popsicle tops or popsicle sticks to the molds.

  • Step 5: Freeze at least 6 hours or until firm. To unfold, let stand at room temperature for 10 minutes or loosen in hot water.
