Step 1: Cover the bottom of a Pam sprayed slow cooker crock with the carrots and onions.
Step 2: Season lightly.
Step 3: Season pork chops with salt and pepper and place the over carrots and sliced onion.
Step 4: In a separate bowl, whisk together broth, preserves, mustard to taste and dried thyme.
Step 5: Pour mixture over the tenderloin.
Step 6: Cover.
Step 7: Cook on Low for 6 hours, or until tender.
