  • 5 cups water
  • 1 pound potatoes, peeled, cubed (2 cups)
  • 1 cup cabbage, shredded
  • 1 cup onions, chopped
  • 1 cup celery, sliced
  • 3 ounces uncooked barley (1/3 cup)
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 28 ounces tomatoes, diced, undrained (1 can)
  • 15 ounces green beans, undrained (1 can)
  • 9 ounces frozen chopped spinach

How to Make

  • Step 1: Brown ground beef and onion in 5-quart Dutch oven and drain.

  • Step 2: Stir in all remaining ingredients except spinach bring to a boil and reduce heat.

  • Step 3: Cover and simmer for 30 minutes.

  • Step 4: Add frozen spinach; cover and simmer for an additional 25 minutes.

  • Step 5: Stir to blend spinach into soup.

  • Step 6: Remove bay leaf.

  • Step 7: Season to taste.
