Ingredients

The ingredients are:
  • 10 ounces frozen chopped spinach, thawed (1 package)
  • 1/4 cup cilantro, chopped
  • 1/4 cup parsley, chopped
  • 1 tablespoon dill, minced
  • 1 1/4 teaspoon kosher salt
  • 5 tablespoons extra-virgin olive oil
  • 2 cups onions, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon lemon pepper
  • 4 ounces dry basmati rice (1/2 cup)
  • 7 ounces green lentils (1 cup)
  • 10 cups vegetable broth
  • Topping
  • 1 lemon
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon lemon pepper
  • 8 ounces plain Greek yogurt (1 cup)

How to Make

  • Step 1: Heat oil in stock pot.

  • Step 2: Saute onions until translucent.

  • Step 3: Add garlic, spices and the rest of the ingredients.

  • Step 4: Simmer covered for 60 minutes.

  • Step 5: Stir occasionally.

  • Topping

  • Step 6: Grate and juice lemon and season to taste.

  • Step 7: Add to yogurt.

  • Step 8: Add a bit to each bowl.
