Ingredients

The ingredients are:
  • 1 1/2 cups white rice
  • 1 tablespoon coconut or canola oil
  • 14 ounces cauliflower, separated into florets (this is about 4 cups)
  • 1/4 teaspoon kosher salt
  • 15 ounces chickpeas, rinsed and drained (1 can)
  • 12 ounces Tikka masala simmer sauce (the Maya Kaimal brand was suggested)(1 jar)

How to Make

  • Step 1: Cook rice according to package directions.

  • Step 2: Meanwhile in a pot over medium high heat add the oil and heat oil and then add he cauliflower and salt and cook for 5 minutes or until cauliflower begins to get tender.

  • Step 3: Stir in chickpeas and sauce and bring to a simmer; cover and cook for 10 minutes or until cauliflower is tender.

  • Step 4: Serve over rice and top with cilantro, if desired.
