Ingredients

The ingredients are:
  • 1 yellow onion, sliced (sweet onions, such as Vidalia, is preferred, but use what you'd like)
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 banana pepper, seeded and sliced (equivalent amount of pepperoncini (pickled in a jar) makes a good substitution). If using a fresh banana pepper, can also add chopped pepperoncini as a topping.
  • 1/3 cup Italian salad dressing (more or less, as long is there's enough to marinate the veggies)
  • 1/4 - 1/2 teaspoon red pepper flakes (optional)
  • 8 submarine rolls or hot dog buns (basically the rolls or buns is to match the size of the sausages/hotdogs used)
  • 2-4 tablespoons butter
  • 8 smoked sausages or bun-size hot dogs (basically the sausage is to match the size of buns/rolls used)
  • Mustard of choice (optional)
  • Dill pickles, chopped (optional)
  • Pepperoncini (pickled in a jar), chopped (optional)

How to Make

  • Step 1: Combine the onion, all the different peppers (and pepperoncini, if using) , salad dressing and pepper flakes, if using, in a sealable plastic bag and turn to coat. (Do this in advance and take the bag along on the fishing trip - Can even marinate overnight in the fridge).

  • Step 2: Cook the pepper mixture with the dressing in a skillet over the grill or campfire (stove-top is fine too) until the onion is translucent and the peppers are tender. Grill the sausages until cooked through. Spread the butter on the cut-side of each roll and grill or toast the buttered side. Serve the sausages in the rolls with the peppers and onions. Top with mustard, chopped dill pickles, and pepperoncini, if you'd like.
