  • 2 tablespoons oil
  • 1 cup onion, chopped
  • 1 clove garlic, smashed
  • 6 cups vegetable broth
  • 15 ounces sauerkraut, undrained (1 can)
  • 16 ounces frozen green beans, chopped
  • 2 pounds red potatoes, chopped
  • 1/3 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces sour cream
  • 2 tablespoons flour

How to Make

  • Step 1: In stock pot, heat oil.

  • Step 2: Add onions cook until translucent.

  • Step 3: Add garlic and season lightly.

  • Step 6: Add flour to sour cream and add to soup.

  • Step 7: Cook until thickened.

  • Step 8: Season to taste.
