Ingredients

The ingredients are:
  • 2/3 cup white quinoa
  • 1/3 cup red quinoa (if you can't find red quinoa use all white quinoa)
  • 3/8 teaspoon salt
  • 1 tablespoon butter, unsalted
  • 2 tablespoons honey or agave nectar
  • 3 tablespoons dried cranberries
  • 2 tablespoons dried cherries
  • Milk or cream
  • Ground cinnamon
  • 1/4 cup almonds, silvered or chopped pecans

How to Make

  • Step 1: Rinse the quinoa in a sieve.

  • Step 2: In a pot on medium high heat bring 2 cups water to a boil and then add the salt and quinoa; reduce heat to a simmer; cover pan and cook for 20 minutes. If all the water hasn't been absorbed drain it and then return quinoa to pan.

  • Step 3: Stir in butter and honey and scatter the dried fruits on top.

  • Step 4: Cover and and let sit for about 5 minutes or until fruit are soft.

  • Step 5: Serve in shallow bowls with milk or cream and dusted with cinnamon and sprinkled with toasted nuts.
