  • Processor
  • 2 cups fresh baby spinach
  • 1/2 cup cilantro
  • 1 jalapeno, minced
  • 1 serrano pepper, minced
  • 2 cloves garlic, minced
  • 2 green onions, minced
  • Rice
  • 14 ounces dry long grain white rice (2 cups)
  • 3 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup frozen corn

How to Make

  • Step 1: In food processor pulse the items until a paste.

  • Step 2: Heat oil and cook rice until opaque.

  • Step 3: Then combine everything else in a covered sauce pan.

  • Step 4: Rinse out processor with water; some folks used chicken broth instead.

  • Step 5: Simmer for 20 minutes covered.

  • Step 6: Leaving lid on let set for 5 minutes off heat.

  • Step 7: Season to taste.
