Step 1: Heat ground beef, celery and onions and cook until brown.
Step 2: Add smashed garlic, spices, tomatoes and mushrooms.
Step 3: Simmer for 60 minutes adding water as needed.
Step 4: Meanwhile, the last 20 minutes cook pasta in heavily salted boiling water until al dente.
Step 5: Drain saving 1/2 cup pasta water.
Step 6: Add pasta water to sauce and cook until tight.
Step 7: Season to taste.
