Step 1: Cook cauliflower in salted water until crisp; drain; cook and break into flowerettes.
Step 2: Butter a 1 1/2 quart casserole.
Step 3: Layer the cauliflower and ham in the casserole, alternating layers, dotting each layer with butter.
Step 4: Combine the next 7 ingredients (chives - egg yolks) in a bowl or measuring cup and pour over casserole.
Step 5: Bake, covered for 30 minutes in a 375 degree oven.
Step 6: Remove cover and top with the shredded cheese and bake for 15 more minutes or until browned.
