Ingredients

The ingredients are:
  • 8 slices bread, sliced in half (suggested bread: sourdough, cracked wheat or rye)
  • 1 stick butter, softened (1/2 cup)
  • Coarse mustard or horseradish
  • 2 cups grated Swiss cheese (or your favorite cheese or combination of cheeses)
  • 4 slices ham or turkey
  • 1/4 cup roasted green chilies, canned and chopped
  • 4 slices tomato, cut in half
  • 8 strips roasted red peppers, cut 1 inch wide
  • 1 onion, sliced and sautéed
  • 1/4 cup mushrooms, sliced and sautéed

How to Make

  • Step 1: Over low heat, heat a cast iron skillet or griddle.

  • Step 2: Butter one side of bread and then on the other side spread with mustard or horseradish.

  • Step 3: Layer on the mustard side of bread, the cheese and the next 6 ingredients (-mushrooms) and then top with another side of bread, buttered side out.

  • Step 4: Repeat with remaining bread making 4 sandwiches.

  • Step 5: Place 2 sandwiches at a time onto the skillet, cheese side down and cook slowly until crisp and golden, pressing occasionally, turning once.

  • Step 6: Allow sandwiches to rest 5 minutes before cutting.
