Step 1: Over low heat, heat a cast iron skillet or griddle.
Step 2: Butter one side of bread and then on the other side spread with mustard or horseradish.
Step 3: Layer on the mustard side of bread, the cheese and the next 6 ingredients (-mushrooms) and then top with another side of bread, buttered side out.
Step 4: Repeat with remaining bread making 4 sandwiches.
Step 5: Place 2 sandwiches at a time onto the skillet, cheese side down and cook slowly until crisp and golden, pressing occasionally, turning once.
Step 6: Allow sandwiches to rest 5 minutes before cutting.
