Step 1: Heat the butter, oil and garlic in a medium frying pan over medium to high heat until butter has melted.
Step 2: Add in the plain flour and cook, stirring the mix for 1 minute or until the mixture begins to bubble.
Step 3: Slowly add in the stock, adding a quarter cup at a time whilst constantly stirring to prevent lumps forming; add in the wine and cream and cook, stirring for 3 minutes or until the sauce boils and thickens; add in the mustard's, to taste & season with salt and ground pepper to taste.
Step 4: Add the prawns to the sauce and simmer, stirring for 3 minutes or until prawns are cooked through.
Step 5: Stir in parsley and serve the creamy garlic prawns sprinkled with fresh chives.
Step 6: Serve with rice and some soft bread rolls to mop up any sauce.
