Step 1: Grind the oats in nut grinder or a food processor.
Step 2: Mix the egg with the yogurt, vanilla and honey in a small bowl.
Step 3: Add the oats and the baking soda.
Step 4: Preheat a non-stick pan, add coconut oil or butter.
Step 5: Scoop batter onto heated pan, making small pancakes.
Step 6: When the edges of the pancakes look done and bubbles come up it's time to flip the pancakes.
Step 7: Cook on the other side as well.
Step 8: Serve immediately with your favorite toppings!
