Ingredients

  • 3 tablespoons butter
  • 16 ounces coleslaw mix, chopped finer
  • 1 cup onion, diced
  • 1 stock celery, sliced
  • 2 pounds potatoes, diced
  • 5 cups vegetable stock
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon salt
  • 12 ounces evaporated milk (1 can)
  • 1/2 cup water

How to Make

  • Step 1: Heat butter in stock pot.

  • Step 2: Add onions, celery and coleslaw mix.

  • Step 3: Cook until softened.

  • Step 4: Add potatoes, stock and spices to taste.

  • Step 5: Add evaporated milk and rinse out can with water adding to soup.

  • Step 6: Simmer 45 minutes stirring occasionally.

  • Step 7: Add water as needed.

  • Step 8: Mash potatoes slightly before serving

  • Step 9: Season to taste.
