Step 1: Heat butter in stock pot.
Step 2: Add onions, celery and coleslaw mix.
Step 3: Cook until softened.
Step 4: Add potatoes, stock and spices to taste.
Step 5: Add evaporated milk and rinse out can with water adding to soup.
Step 6: Simmer 45 minutes stirring occasionally.
Step 7: Add water as needed.
Step 8: Mash potatoes slightly before serving
Step 9: Season to taste.
