  • 2 green onions, minced
  • 2 cups green cabbage, shredded

  • 4 ounces dry green lentils (1/4 cup)
  • 8 cups vegetable stock
  • 2 pounds potatoes, peeled, diced into 1/2 inch cubes
  • 1 teaspoon sea salt, to taste
  • 15 ounces cannellini beans, drained (1 can)
  • 1 cup fresh baby spinach
  • 1 teaspoon black pepper
  • 3 tablespoons pesto sauce
  • 4 ounces dry ditalini pasta
  • Garnish
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Heat oil and add onions, garlic and cabbage.

  • Step 2: Add rest of ingredients except pasta.

  • Step 3: Simmer 90 minutes adding water as needed.

  • Step 4: Add pasta and simmer for 30 minutes.

  • Step 5: Season to taste.

  • Step 6: Garnish with fresh parsley.
