  • 1/2 cup butter, softened (1 cube, no subs!)
  • 1/2 cup shortening
  • 1 cup sifted powdered sugar
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/3 cup frozen orange juice concentrate, thawed (half of a 6oz can)
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • Icing:
  • 1/3 cup frozen orange juice concentrate, thawed (half of a 6oz can)
  • 1/2-1 teaspoon orange zest (optional)
  • 3 cups powdered sugar, sifted

How to Make

  • Step 1: Preheat oven to 375F. In large mixing bowl beat butter and shortening on medium to high for 30 seconds, or until softened.

  • Step 2: Add powdered sugar and baking soda and beat until combined.

  • Step 3: Beat in egg, orange juice concentrate, and vanilla until combined.

  • Step 4: Mix in flour until combined.

  • Step 5: Drop by a rounded tablespoon 2-inches apart onto ungreased cookie sheet.

  • Step 6: Bake at 375F for 8 minutes, or until edges are lightly browned. Cool on cookie sheets for 1 minute. Transfer to wire rack and cool completely.

  • Step 7: Combine all the icing ingredients in a mixing bowl and beat until smooth. Adjust powdered sugar amount until proper spreading consistency. Spread icing on completely cooled cookies.

  • Step 8: Store in airtight container up to 1 day. To make ahead, freeze cookies without icing up to 1 month. Thaw for 15 minutes and spread with icing.
