Ingredients

The ingredients are:
  • 1 cup fresh or frozen peas, thawed if using frozen peas
  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves
  • 1 garlic clove, chopped
  • 2 teaspoons ginger, chopped
  • 1/2 teaspoon serrano, minced or sub 1 teaspoon jalapeno, minced
  • 1/2 teaspoon coriander, ground
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon sugar
  • 2 tablespoons lime juice
  • 1/4 -1/2 cup water

How to Make

  • Step 1: In a saucepan over medium heat add the cashews and enough water to cover by one inch and bring to a boil, uncovered.

  • Step 2: Remove from heat. Cover and set aside for 20 minutes.

  • Step 3: Drain cashews and then add them to a food processor or blender along with peas, mint and the next 8 ingredients plus 1/4 cup water and then process or blend for 30 seconds or until mixture is pureed. You may need to add more water to thin the mixture if too thick.

  • Step 4: Refrigerate before serving.
