Step 1: In a saucepan over medium heat add the cashews and enough water to cover by one inch and bring to a boil, uncovered.
Step 2: Remove from heat. Cover and set aside for 20 minutes.
Step 3: Drain cashews and then add them to a food processor or blender along with peas, mint and the next 8 ingredients plus 1/4 cup water and then process or blend for 30 seconds or until mixture is pureed. You may need to add more water to thin the mixture if too thick.
Step 4: Refrigerate before serving.
