  • 1 clove garlic, smashed
  • 16 ounces coleslaw mix (1 bag)
  • 1/2 teaspoon salt
  • 1 cup green pepper, diced
  • 1/4 cup vegetable stock
  • 28 ounces tomatoes, undrained (1 can)
  • 16 ounces chickpeas (1 can)
  • 1/4 cup raisins
  • 2 teaspoons ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Get spices ready. Some folks like more spice, you do you.

  • Step 2: Saute onions in oil until translucent.

  • Step 3: Add coleslaw mix.

  • Step 4: And vegetable broth and sprinkle with salt lightly.

  • Step 5: Saute covered for another 5 minutes.

  • Step 6: Add bell pepper and spices.

  • Step 7: Saute another minute.

  • Step 8: Stir in tomatoes, chickpeas and raisins.

  • Step 9: Simmer, covered, for 15 minutes until vegetables are tender.

  • Step 10: Add lemon juice and season to taste.
