Ingredients

The ingredients are:
  • 1 cooked chicken breast, shredded or cubed
  • 2 teaspoons olive oil
  • 1/2 medium onion, chopped
  • 1 clove minced garlic
  • 2 teaspoons Italian Seasoning
  • Salt and pepper
  • 1 (8 ounce) can tomato sauce
  • 3/4 cup uncooked rice
  • 1 3/4 cup chicken broth
  • Shredded Italian-blend cheese for topping

How to Make

  • Step 1: Saute onions and garlic in olive oil about 5 minutes. Add chicken, tomato sauce, Italian Seasoning, salt and pepper and chicken broth. Bring to a boil.

  • Step 2: Stir rice into sauce mixture. Simmer covered about 35 minutes. Stir occasionally to keep rice from sticking. Rice should be tender and liquid absorbed. Sprinkle with grated cheese.
