Ingredients

The ingredients are:
  • 2/3 cup flour
  • 1 teaspoon salt
  • 3 eggs
  • 3 tablespoons water
  • 1 1/2 cups panko bread crumbs
  • 3 avocados, pitted, peeled and cut into 8 wedges each
  • 1/2 cup mayonnaise
  • 1/4 cup blue cheese, crumbled
  • 2 tablespoons buttermilk
  • 1 teaspoon cider vinegar
  • Hot pepper sauce

How to Make

  • Step 1: Preheat oven to 450 degrees F.

  • Step 2: In a shallow dish (or pie plate) combine the flour and salt.

  • Step 3: In another pie dish or shallow dish beat the eggs and water together.

  • Step 4: In a third pie dish add the panko.

  • Step 5: Coat each avocado wedge first in the flour mixture, then the egg mixture and finally in the panko and then place on a baking sheet which has been lined with foil and sprayed with cooking spray.

  • Step 6: Coat the top of the avocado wedges with the cooking spray.

  • Step 7: Bake for 15 minutes or until golden.

  • Step 8: To make the blue cheese dressing: in a small bowl or dish whisk together the mayonnaise, blue cheese , buttermilk and vinegar.

  • Step 9: Place the wedges on a platter with other vegetables such as carrots and celery sticks and serve with the dressing and hot pepper sauce.
