  • 8 ounces kohlrabi, peeled, diced
  • 1 carrot, grated
  • 2 green onions, minced
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1/4 teaspoon ground nutmeg
  • 1/16 teaspoon whole cumin
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon white pepper
  • 6 cups water
  • 1 tablespoon fresh chives, minced

How to Make

  • Step 1: Cut the cauliflower into small florets.

  • Step 2: Finely chop the chives, green onions, kohlrabi and grate the carrot on a coarse grater.

  • Step 3: Fry a light roux: saute butter and flour.

  • Step 4: Add water and beat with a whisk and bring to a boil over low heat.

  • Step 5: Add all the vegetables, paprika, cumin, nutmeg, pepper and salt.

  • Step 6: Mix and cook on a simmer for 45 minutes after boiling.

  • Step 7: If necessary, add boiled hot water and season to taste.
