Step 1: Get spices ready.
Step 2: Season beef lightly.
Step 3: Sauté onion and beef until browned.
Step 4: Add garlic in fat until browned.
Step 5: Stir in spices.
Step 6: Add beef broth and vegetables except for potatoes, tomatoes, and parsley.
Step 7: Bring to a boil, then simmer covered for 1 1/2 hours.
Step 8: Add potatoes and tomatoes and cook 1 hour before you finish cooking.
Step 9: Then uncover and cook over medium heat for 30 minutes.
Step 10: Meanwhile, cook noodles in heavily salted boiling water until al dente.
Step 11: Drain.
Step 12: Add cooked wide noodles.
Step 13: Simmer 10 minutes.
Step 14: Garnish with parsley and serve with a good bread.
