Step 1: Preheat oven to 500 degrees F and then place a baking sheet in the oven.
Step 2: To prepare the carrots toss carrots in a bowl and then add the oil, cumin , pepper and salt and toss.
Step 3: Remove baking sheet from oven and spread carrots on it and then roast them for 15 minutes; turn the carrots and cook for another 10 minutes or until tender and charred.
Step 4: Meanwhile make the sauce by combining the sauce ingredients (yogurt -sea salt) in a bowl. Set aside.
Step 5: Remove carrots from oven and place them on a platter and then drizzle some of the sauce over the carrots and serve extra sauce on the side. Sprinkle with cilantro and serve.
