Ingredients

The ingredients are:
  • 1 1/2 pounds carrots, trimmed, peeled and cut into 3 x 1/2 inch sticks
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon cumin, ground
  • Pepper
  • 1/2 teaspoon kosher salt
  • 2/3 cup plain yogurt, Greek
  • 2 teaspoons ginger, grated
  • 1/8 teaspoon serrano, minced or 1 teaspoon jalapeno, minced
  • 1 tablespoon cilantro, minced
  • 1/4 teaspoon sea salt

How to Make

  • Step 1: Preheat oven to 500 degrees F and then place a baking sheet in the oven.

  • Step 2: To prepare the carrots toss carrots in a bowl and then add the oil, cumin , pepper and salt and toss.

  • Step 3: Remove baking sheet from oven and spread carrots on it and then roast them for 15 minutes; turn the carrots and cook for another 10 minutes or until tender and charred.

  • Step 4: Meanwhile make the sauce by combining the sauce ingredients (yogurt -sea salt) in a bowl. Set aside.

  • Step 5: Remove carrots from oven and place them on a platter and then drizzle some of the sauce over the carrots and serve extra sauce on the side. Sprinkle with cilantro and serve.
