Ingredients

The ingredients are:
  • 2 eggs
  • 3/4 cup panko breadcrumbs (55 grams)
  • 1 tablespoon Cajun seasoning
  • 750 grams prawns, raw peeled and deveined (16 prawns specified)
  • Olive oil cooking spray
  • 1 long baguette
  • 1/3 cup mayonnaise (100 grams)
  • 1 baby cos lettuce, leaves separated (180 grams)
  • 2 medium tomatoes, sliced thinly (300 grams)
  • 3 gherkins, cut into rounds
  • TO SERVE:
  • Mayonnaise, extra
  • Chives, chopped finely
  • Gherkins, extra

How to Make

  • Step 1: Lightly beat eggs and 1 tablespoon water in a shallow bowl.

  • Step 2: Combine breadcrumbs and seasoning in a second shallow bowl.

  • Step 3: Dip prawns in egg, then coat in breadcrumb mixture and spray generously all over with cooking spray.

  • Step 4: Preheat a 7-litre air fryer to 180C for 3 minutes.

  • Step 5: Taking care, place prawns, in a single layer, in the air fryer basket; cook for 6 minutes, turning halfway through cooking time, until

  • Step 6: Golden brown and cooked through..

  • Step 7: Trim ends from baguette and discard; cut into four even pieces, then split horizontally, being careful not to cut all the way through.

  • Step 8: Spread bases with mayonnaise, then fill with lettuce, tomatoes, gherkins and prawns and drizzle with extra mayonnaise and sprinkle with chopped chives and serve with extra gherkins.
