Step 1: Heat 2 tablespoons of olive oil in a pot.
Step 2: Add the onions and saute for a good 8 minutes until they are translucent and tender.
Step 3: Add the garlic and saute for a minute until fragrant.
Step 4: Add seasoning.
Step 5: Add the green beans and potatoes.
Step 6: Saute the green beans and potatoes for about 5 minutes.
Step 7: Now add the tomato.
Step 8: Saute for another two minutes.
Step 9: Add the vegetable broth and bring to a boil and then to a simmer.
Step 10: Simmer the stew for about 45 minutes until the green beans and potatoes are tender.
Step 11: If the stew starts to get dry simply add some more broth.
Step 12: Re-season with salt and pepper to taste.
