Ingredients

The ingredients are:
  • 30 ounces cannelloni beans (2 cans)
  • 5 ounces bacon (5 slices)
  • 2 cups red bell pepper, chopped
  • 1 cups onion, chopped
  • 1 cup carrot, chopped
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper, ground
  • 1 tablespoon minced garlic
  • 48 ounces chicken broth (3 cans)
  • 1/2 cup fresh parsley, chopped

How to Make

  • Step 1: Assemble spices.

  • Step 2: Cook the bacon in stock pot over medium heat until crisp.

  • Step 3: Remove bacon from pan, crumble and set aside.

  • Step 4: Add bell pepper and onions to drippings in pan.

  • Step 5: Add carrots and garlic.

  • Step 6: Sauté 10 minutes or until browned.

  • Step 7: Add spices.

  • Step 8: Stir in the broth, scraping pan to loosen browned bits.

  • Step 9: Add beans.

  • Step 10: Bring to a boil.

  • Step 11: Cover, reduce heat, and simmer 1/2 hour or until beans are tender.

  • Step 12: Place 3 cups of the bean mixture in a blender

  • Step 13: And process until smooth.( Or use stick blender or potato masher)

  • Step 14: Return the pureéd mixture to pan.

  • Step 15: Stir in the bacon and parsley.
