  • 1 cup dark raisins
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg
  • 1/4 cup molasses
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking power
  • 1/4 cup powdered sugar, sifted
  • Frosting
  • 3 ounces cream cheese, room temperature (1 package)
  • 1 tablespoon butter, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar, sifted
  • 2 tablespoons milk

How to Make

  • Step 1: In a medium-size saucepan, combine sugar, margarine, raisins, water, spices and molasses.

  • Step 2: Bring to a boil and boil 3 minutes.

  • Step 3: Remove from heat and cool thoroughly.

  • Step 4: When mixture is cool, preheat oven to 350 degrees.

  • Step 5: Combine flour, baking soda and baking powder and add to mixture, mixing well with a wooden spoon.

  • Step 6: Spread evenly in a greased and floured 13-by-9-inch pan.

  • Step 7: Bake in preheated oven 20 to 25 minutes or until cake tests clean with a toothpick.

  • Step 8: Remove from oven and cool completely.

  • Step 9: Top with powdered sugar sifted over cake or frosting.

  • Frosting:

  • Step 10: In large bowl, combine all ingredients.

  • Step 11: Mix until smooth.

  • Step 12: Frost cake.

  • Step 13: Cut into bars to serve.
