  • 3 tablespoons olive oil
  • 1 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tablespoon ginger, peeled, finely grated
  • 3 cups tomatoes, finely chopped
  • 1 1/2 tablespoons tomato paste
  • 1 tablespoon tahini
  • 1 teaspoon Baharat mixed spice
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon rose water
  • 1 1/3 cups water
  • 1/4 cup fresh parsley, chopped

How to Make

  • Step 1: Pound chicken breasts thin.

  • Step 2: Heat a grill pan over medium-high heat.

  • Step 3: Season chicken breasts with olive oil, salt and pepper to taste.

  • Step 4: Cook for 3 minutes per side.

  • Step 5: In a large saucepan, heat more olive oil, add onion, cook stirring until beginning to brown 7 minutes.

  • Step 6: Add ginger, garlic and spices, cook stirring until fragrant.

  • Step 7: Add chopped tomatoes, tomato paste, tahini, rose water and water and simmer for 15 minutes over medium heat.

  • Step 8: Add chicken and fresh parsley, simmer for 20 minutes over medium heat.
