  • 16 ounces dry rotini pasta
  • 6 cups water, boiling
  • 1 teaspoons salt
  • Salad
  • 2 lemons, zest of, grated
  • 1/2 cup olive oil
  • 1/3 cup fresh lemon juice
  • 1 teaspoon salt, to taste
  • 1 teaspoon ground pepper
  • 3 tomatoes, cored, chopped
  • 1/4 cup fresh basil leaf, chopped
  • 8 ounces fresh parmesan cheese, shaved (1 cup)
  • 1/2 teaspoon dried basil

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente.

  • Step 2: Drain.

  • Step 3: Meanwhil, combine the lemon zest, olive oil, lemon juice, salt and pepper (or lemon pepper) in a bowl .

  • Step 4: Set aside.

  • Step 5: Drain pasta and transfer to a large bowl.

  • Step 6: Pour lemon oil mixture over warm pasta.

  • Step 7: Toss cover and refrigerate for at least one hour.

  • Step 8: Stir in the tomatoes, fresh basil, cheese and dried basil.

  • Step 9: Cover and refrigerate for an additional hour.

  • Step 10: Season to taste.
