Step 1: In a bowl add olives.
Step 2: In a saucepan over medium high heat combine all the remaining ingredients (olive oil - allspice) and bring to a simmer.
Step 3: Pour mixture over the olives and then cover and chill for 3 days or up to one week.
Step 4: Bring olives back to room temperature and then using a slotted spoon transfer olives, herbs and spices to serving dish.
Step 5: Pour enough oil to cover olives.
