Ingredients

The ingredients are:
  • 4 cups brine-cured olives, rinsed and drained (assorted)
  • 1 1/2 cups olive oil
  • 6 thyme sprigs
  • 6 star anise
  • 4 garlic cloves, peeled and flattened
  • 2 rosemary sprigs
  • 2 bay leaves
  • 2 cinnamon sticks, broken in half
  • 1 tablespoon coriander seeds, cracked
  • 1 teaspoon dried crushed red peppers
  • 1/4 teaspoon allspice, ground

How to Make

  • Step 1: In a bowl add olives.

  • Step 2: In a saucepan over medium high heat combine all the remaining ingredients (olive oil - allspice) and bring to a simmer.

  • Step 3: Pour mixture over the olives and then cover and chill for 3 days or up to one week.

  • Step 4: Bring olives back to room temperature and then using a slotted spoon transfer olives, herbs and spices to serving dish.

  • Step 5: Pour enough oil to cover olives.
