Step 1: Heat the oil in a large skillet or low casserole.
Step 2: Cook sausages over medium heat until they are browned and cooked through. This will take around 6-8 minutes, depending on the thickness of your sausages.
Step 3: Remove the sausages from the skillet and slice them into thick chunks. Cover with foil to keep warm.
Step 4: In the same skillet, add the onion and cook for 2-3 minutes until translucent and starting to color on the edges.
Step 5: Add curry powder and flour and stir well into the onions.
Step 6: Gradually add the broth; the mixture will initially clump together like wet sand, but keep slowly stirring in your broth, and your curry gravy will come together smoothly.
Step 7: Add the carrots, salt, and pepper and stir.
Step 8: Bring to a simmer and cook for 5 minutes.
Step 9: Add the sliced sausages, peas, and corn, and bring back to a simmer. Cook for 2 minutes.
Step 10: Serve immediately or allow to cool and store for later.
Step 11: NOTE - please feel free to add other vegetables or choose as you wish. The DH decided to add 1 tablespoon of minced garlic when sauteing the onions.
