  • 2 serrano chiles, minced
  • 1 tablespoon smoked paprika
  • 4 cups tomato juice
  • 2 cups water
  • 16 ounces dried navy beans
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup cilantro, chopped

How to Make

  • Step 1: I soak beans overnight.

  • Step 2: Drain.

  • Step 3: In large stockpot, heat oil and add onions and peppers.

  • Step 4: Cook until translucent.

  • Step 6: Stir, and don't burn.

  • Step 7: Add tomato juice and water.

  • Step 8: Add soaked beans.

  • Step 9: Simmer 2 hours adding water as needed.

  • Step 10: Season to taste.

  • Step 11: Add cilantro last 5 minutes.
