Ingredients

The ingredients are:
  • 8 ounces ziti or your favorite tubular pasta
  • 1 pound asparagus, trimmed and cut diagonally into 1 inch pieces
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon pepper
  • 3 ounces smoked mozzarella, diced (you need 1/2 cup)
  • 3 ounces prosciutto, slices and cut crosswise into strips (I think leftover ham will also work)
  • 3 tablespoons basil, sliced

How to Make

  • Step 1: Put a large pot of salted water on high heat and bring it to a boil; add the pasta and cook for 5 minutes; add asparagus and cook for another 2 minutes or until pasta is tender and asparagus is crisp-tender; drain but reserve 1 cup cooking water.

  • Step 2: In a large skillet over medium heat heat the oil and then add the garlic and saute for under a minute. Stir in the pasta and asparagus along with 1/2 teaspoon salt and 1/2 teaspoon pepper and 1 cup of the reserved cooking water; toss. Remove from heat and add the mozzarella, prosciutto and basil and toss. Transfer to bowls and serve.
