Ingredients

The ingredients are:
  • 4 eggs
  • 500 grams fresh green beans, tailed
  • 200 grams rind less streaky bacon, chopped
  • 2 small french shallots, finely sliced (or half a small red onion)
  • 1 clove garlic, crushed
  • 2 teaspoons Dijon mustard
  • 1 1/2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • Salt and pepper

How to Make

  • Step 1: Tip ~ If you are wanting to do preparation salad ~ prepare the beans, bacon, dressing and eggs in advance and keep separate & store in the refrigerator. Put the salad together just before serving.

  • Step 2: Bring a large pan of water to the boil and cook eggs for 6-7 minutes or until medium; when cooked place the eggs into cold water to prevent further cooking and when cool peel the eggs.

  • Step 3: Using another pan ~ blanch the green beans in boiling water for 3 minutes then immediately refresh the beans in cold water; drain the beans well and transfer them to a salad bowl.

  • Step 4: Cook the bacon in a frying pan until golden and crisp; cool bacon a little and toss the bacon through beans

  • Step 5: Combine the French shallots or red onion, garlic, mustard and vinegar together in a small bowl and mix well; whisk in olive oil until thick and thoroughly combined.

  • Step 6: Season with salt and pepper to taste then drizzle ¾ of the dressing over the beans and bacon and toss to mix ingredients through.

  • Step 7: Grate the boiled eggs over the top of the salad and drizzle with remaining dressing.

  • Step 8: Serve immediately
