Step 1: Preheat oven to 350F.
Step 2: Coat a 13x9x2 inch oblong baking dish with nonstick spray.
Step 3: Macerate berries in sugar, lemon uice and lemon zest for 5 minutes.
Step 4: Stir together batter ingredients.
Step 5: Add melted butter into the bottom of the baking dish and top with chopped rhubarb, then pour the batter mixture on top.
Step 6: Scatter berry mixture over the wet batter in the dish.
Step 7: Bake for 65-70 minutes or until golden and batter is set.
