  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup chopped cinnamon-sugar candied pecans
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Coat a 13x9x2 inch oblong baking dish with nonstick spray.

  • Step 3: Macerate berries in sugar, lemon uice and lemon zest for 5 minutes.

  • Step 4: Stir together batter ingredients.

  • Step 5: Add melted butter into the bottom of the baking dish and top with chopped rhubarb, then pour the batter mixture on top.

  • Step 6: Scatter berry mixture over the wet batter in the dish.

  • Step 7: Bake for 65-70 minutes or until golden and batter is set.
