Step 1: Preheat oven to 325˚F.
Step 2: Submerge corned beef in cold water for 15 minutes. Drain and pat dry. (IMPORTANT STEP, if not, the corned beef will come out over salted. Believe me, I made this mistake and I like a salty corned beef).
Step 3: Meanwhile, in a small bowl, stir together the brown sugar, mustards, seasoning packet (that comes with the corned beef), and hot sauce; set aside.
Step 4: Remove corned beef from water and drain. Place it in a baking dish. Rub seasoning mixture all over the corned beef. To the sides of the baking dish, add Guinness or Stout beer.
Step 5: Cover the pan tightly with aluminum foil and bake for 3 1/2 - 4 hours or until tender, removing the cover for the final 30 minutes of cooking (optional).
Step 6: Remove from oven and allow the corned beef to rest for about 10-15 minutes before slicing. Enjoy!
