Step 1: Pre-heat oven 200°C.
Step 2: Place the pastry on a tray lined with baking paper and set aside.
Step 3: Use a mandolin to slice apples into 2mm rounds.
Step 4: Toss apples in lemon juice and arrange over pastry, leaving a 2cm border.
Step 5: Crimp the edges of the pastry and then brush the apples with 3/4 of the honey.
Step 6: Dot the tart with butter and bake for 20 minutes or until the apples are soft and the pastry crisp.
Step 7: Brush the hot tart with the remaining honey, lightly dust with icing sugar and serve.
