Ingredients

The ingredients are:
  • 1 cup bitter orange juice (or 1/4 cup of grapefruit juice mixed with orange juice, lime juice and white vinegar)
  • 1/4 teaspoon allspice, ground
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon pepper
  • 1 red onion, sliced (you need 2 cups sliced red onion)
  • 2 bay leaves
  • 1 banana pepper (or jalapeno or serrano chile -- the type you choose will determine the spiciness of the pickled red onions)

How to Make

  • Step 1: In a bowl place the bitter orange juice, allspice, salt and pepper and mix to combine. Stir in the red onion and the bay leaves.

  • Step 2: Char or broil the banana pepper (or whichever chile you choose) under the broiler -- 3-10 minutes.

  • Step 3: Add pepper to the onion mixture and toss.

  • Step 4: Let marinate at room temperature for at least 30 minutes or up to 2 hours before serving.

  • Step 5: ***Can be stored in the refrigerator, covered for up to one month.
