Step 1: Put potatoes and lemon juice in a bowl, toss gently and let sit for 10 minutes.
Step 2: Drain off excess liquid.
Step 3: Add onion, cream, salt and pepper; mix.
Step 4: In a medium nonstick frying pan, bring butter to a fast bubble.
Step 5: Add potato mixture and cover.
Step 6: Cook over medium heat until potatoes are brown.
Step 7: Turn potatoes, cover and cook until potatoes are light brown on both sides.
Step 8: Remove from pan and cut into squares.
