Ingredients

The ingredients are:
  • 1 (3 ounce) package ramen noodles
  • 3/4 cup coarsely chopped walnuts
  • 2 tablespoons butter (can use more)
  • 1/3 to 1/2 cup sugar
  • 1/2 cup canola oil or vegetable oil
  • 4 tablespoons red wine vinegar
  • 1 teaspoon low-sodium soy sauce
  • 1/2 teaspoon fresh ground black pepper
  • 1 large romaine lettuce, chopped (or a bag of mixed greens)
  • 1 small red onion, thinly sliced
  • 2 cups fresh red strawberries, sliced
  • Salt, optional and to taste
  • 1/2 cup coarsely crumbled feta cheese

How to Make

  • Step 1: Remove the seasoning packet from ramen noodles discard or save for another use. Break noodles into pieces. In a large skillet, cook noodles and walnuts in butter over medium heat for 8-10 minutes or until golden; cool.

  • Step 2: For the dressing; in a small bowl, whisk the sugar, oil, vinegar, soy sauce and black pepper.

  • Step 3: Just before serving combine the romaine, onions, strawberries and noodle mixture in a large bowl; pour dressing over then toss gently. Season with more black pepper and salt if desired. Place crumbled feta on top of the salad.
