Ingredients

The ingredients are:
  • 15 ounces chickpeas, rinsed, drained (1 can)
  • 1 large ripe avocado
  • 1/2 medium onion finely chopped
  • 1/4 cup coriander leaves finely chopped
  • 1/2 lime, juiced
  • Pepper and salt to taste
  • 4 slices whole wheat bread
  • Salad greens (baby spinach or other greens or sprouts would work too)

How to Make

  • Step 1: In a large bowl mash the chickpeas.

  • Step 2: Add the avocado, onion, cilantro, lime juice, and seasonings.

  • Step 3: And using a fork or a potato masher, smash the ingredients until coarsely mashed.

  • Step 4: Taste and adjust the seasoning at this stage.

  • Step 5: Take a sandwich bread and apply some smashed chickpea avocado mixture generously on one slice of the bread.

  • Step 6: Top with spinach or any greens.

  • Step 7: Cover and press with other bread slice over it.

  • Step 8: Cut in half and enjoy.
