Step 1: Place chicken schnitzels on flat side of panini, then top with the pasta sauce, basil leaves and cheese.
Step 2: Top with remaining panini half and sandwich together.
Step 3: Preheat a grill plate sandwich press, then add a spread of butter over the top for extra flavor and to get a golden crust & cook until toasted and cheese has melted.
Step 4: Spread a little extra butter over the tops while still warm and serve immediately with some fresh spinach on the side.
