Step 1: Thaw pastry for 20 minutes.
Step 2: In a cup combine sugar with cinnamon and set aside.
Step 3: Preheat oven to 350 degrees F.
Step 4: On a floured surface, roll pastry out to a 12 x 15 inch rectangle and then place it on an ungreased baking sheet.
Step 5: Place apples in center and sprinkle with the raisins and cinnamon sugar.
Step 6: Brush edges of dough with egg and water mixture.
Step 7: Roll up jellyroll-style with seam side down; turn ends under.
Step 8: Brush with the egg mixture.
Step 9: Make diagonal cuts across top at about 2 inch intervals.
Step 10: Bake for 35-40 minutes.
