  • 8 teaspoons sugar
  • 3 cups Bisquick baking mix
  • Wet
  • 8 ounces cottage cheese, (1 cup)
  • 2 eggs
  • 2 tablespoons lemon juice
  • Topping
  • 4 tablespoons butter, melted

How to Make

  • Step 1: In a large mixing bowl, whisk together Bisquick and sugar, just to combine.

  • Step 2: Set aside.

  • Step 3: Pour remaining ingredients into blender and blend on high about 30 seconds, or until smooth and completely combined.

  • Step 4: Add blender contents to Bisquick and stir with a heavy spoon until all particles are moistened, and dough begins to pull away from the bowl.

  • Step 5: Turn out onto a board floured with Bisquick.

  • Step 6: With floured hands, knead dough until smooth and elastic, about 5 min.

  • Step 7: Gently pat dough down to about 3/4 of an inch thickness.

  • Step 8: Dip a biscuit cutter or juice glass in Bisquick and cut biscuits.

  • Step 9: Arrange on a greased cookie sheet .

  • Step 10: Cover with damp linen or paper towel, and let rise slightly, 30 to 45 minutes.

  • Step 11: Bake at 450 about 15 minutes, or until tops are golden brown.

  • Step 12: Brush tops with butter.
