The ingredients are:

  • 8 ounces fresh baby spinach
  • 8 ounces mixed baby greens
  • 1/4 cup black olives, sliced
  • 2 cups tomatoes, rough chop
  • 1 cucumber, peeled, diced
  • 12 ounces tuna, drained (1 can)
  • 4 eggs, hardboiled
  • Dressing
  • 1 tablespoon lemon juice
  • 4 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic salt, to taste
  • 1/4 teaspoon lemon pepper, to taste
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Mix lettuce and spinach.

  • Step 2: Toss in cucumber and tomatoes.

  • Step 3: Add drained tuna.

  • Step 4: Toss in olives.

  • Step 6: Divide evenly into 2 large serving bowls.

  • Step 7: Cut one egg in half put in center

  • Step 8: Cut 3 eggs in 4ths and put like rays around center egg.

  • Step 9: Shake salad ingredients.

  • Step 10: And pour equally over 2 salads.

  • Step 11: Sprinkle with fresh parsley.
